crab and rocket sandwiches

  • 250g fresh crab meat
  • ½ cup (150g) whole-egg mayonnaise
  • 1 teaspoon wasabi paste
  • 2 tablespoons lime juice
  • ¼ cup chopped green onions (scallions)
  • sea salt and cracked black pepper
  • 12 slices white bread, crusts removed
  • 100g rocket (arugula) leaves
  • 1 tablespoon lemon zest

Place the crab, mayonnaise, wasabi, lime juice, green onion, salt and pepper in a bowl and mix to combine. Spread the crab mixture over the bread slices and top with the rocket and lemon zest to serve. Serves 12.
