300g field mushrooms
300g Swiss brown mushrooms
100g unsalted butter, chopped
½ cup (125ml) dry sherry
6 cloves garlic
10 sprigs thyme
sea salt and cracked black pepperPreheat oven to 200°C (390ºF). Place the mushrooms in a baking dish and top with butter, sherry, garlic, thyme, salt and pepper. Bake for 15–20 minutes or until the mushrooms are tender and juicy. Serve as a side dish with your favourite barbecued or roasted meat or for breakfast on a thick piece of buttered toast. Serves 4.
