16 slices brioche
1 tablespoon Dijon mustard
16 slices Swiss cheese
8 slices leg ham
80g baby spinach leaves
melted unsalted butter, for brushingSpread half the brioche slices with the mustard, top with the cheese, ham and spinach and sandwich with the remaining brioche. Heat a large non-stick frying pan over medium heat. Brush both sides of the sandwiches with butter and cook for 2−3 minutes each side or until golden and the cheese has melted. Serves 4.
