swiss cheese, spinach and ham brioches

  • 16 slices brioche
  • 1 tablespoon Dijon mustard 
  • 16 slices Swiss cheese 
  • 8 slices leg ham 
  • 80g baby spinach leaves
    melted 
  • unsalted butter, for brushing
  1. Spread half the brioche slices with the mustard, top with the cheese, ham and spinach and sandwich with the remaining brioche.
  2. Heat a large non-stick frying pan over medium heat. Brush both sides of the sandwiches with butter and cook for 2−3 minutes each side or until golden and the cheese has melted. Serves 4.
