apple cucumber, peeled and thinly sliced
1 Lebanese cucumber, thinly sliced
4 baby cucumbers, thinly sliced
70g baby spinach leaves
500g broad (fava) beans, blanched and peeled
1 tablespoon finely grated lemon rind
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
sea salt and cracked black pepperPlace the cucumber, spinach leaves, broad beans, lemon rind, olive oil, vinegar, salt and pepper in a bowl and toss until well combined. Serve with grilled fish or seafood. Serves 4.
