250g fresh crab meat
½ cup (150g) whole-egg mayonnaise
1 teaspoon wasabi paste
2 tablespoons lime juice
¼ cup chopped green onions (scallions)
sea salt and cracked black pepper
12 slices white bread, crusts removed
100g rocket (arugula) leaves
1 tablespoon lemon zestPlace the crab, mayonnaise, wasabi, lime juice, green onion, salt and pepper in a bowl and mix to combine. Spread the crab mixture over the bread slices and top with the rocket and lemon zest to serve. Serves 12.
