4 long red chillies, chopped
3 cloves garlic, peeled
1 cup coriander (cilantro) leaves
½ cup (135g) grated palm sugar
⅓ cup (80ml) fish sauce
1 cup (250ml) lime juice, (about 4 limes)
1 x 5cm piece (25g) ginger, peeled and slicedPlace the chillies, garlic, coriander, sugar, fish sauce, lime juice and ginger in the bowl of a food processor. Process for 1–2 minutes or until well combined. Makes 2 cups.
