  • ½ cup mint leaves
  • 300g beef mince
  • ¼ cup (60ml) oyster sauce
  • 2 teaspoons finely grated ginger
  • 2 teaspoons vegetable oil
  • 150g snow peas (mange tout), sliced and blanched
  • 250g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 2 tablespoons fish sauce
  • 2 ½ tablespoons lime juice
  • 1 ½ tablespoon caster (superfine) sugar
  • 1 small red chilli, chopped
