1 cup cooked couscous
1 small red onion
¼ cup mint leaves
¼ cup chopped chives
1 x 350g pork fillet, trimmed
1 teaspoon store-bought harissa+Place the couscous, onion, mint and chives in a bowl and toss to combine. Set aside.
Brush the pork with harissa. Heat a char-grill or barbecue over high heat and char-grill or barbecue the pork for 4–5 minutes each side or until cooked through. Slice and serve with the couscous. Serves 4.
