¼ cup (75g) whole-egg mayonnaise
2 tablespoons water
sea salt and cracked black pepper
1 store-bought barbecue chicken, skin removed and shredded
1 fennel bulb, outer leaves removed and thinly sliced
2 small carrots, thinly sliced
¼ cup chopped chives
4 green onions (scallions), sliced
1 tablespoon sesame seeds, toastedPlace the mayonnaise, lemon juice, water, salt and pepper in a bowl and stir to combine. Set aside. Place the chicken, fennel, carrot, chives, green onion and sesame seeds in a bowl. Add the mayonnaise dressing and gently toss to combine. Serves 4.
