1 teaspoon peanut oil
2 x 200g chicken breast fillets, trimmed and sliced
200g snow peas (mange tout), trimmed and thinly sliced
200g broccolini, trimmed and sliced
1 clove garlic, crushed
2 tablespoons hoisin sauce
2 tablespoons soy sauce
steamed rice or noodles, to serveHeat half the oil in a large non-stick frying pan or wok over high heat. Stir-fry chicken in batches for 2 minutes or until cooked through. Set aside.
Add remaining oil and stir-fry snow peas for two minutes. Return chicken to the pan or wok along with the broccolini, garlic, hoisin and soy sauce. Stir-fry for a further 2–3 minutes or until broccolini is tender. Serve with steamed rice or noodles. Serves 2.
