½ cup (125ml) white balsamic vinegar
¼ cup (55g) caster (superfine) sugar
1 papaya, peeled and cut into 6 slices
6 slices prosciutto
½ cup mint leavesPlace the vinegar and sugar in a saucepan over medium heat and stir until dissolved. Bring to the boil and cook for 6–8 minutes or until thickened slightly. Set aside to cool. Wrap the papaya with the prosciutto and place in a bowl. Sprinkle with the mint and spoon over the vinegar syrup to serve. Serves 6.
