250g cherry tomatoes, halved
2 Lebanese cucumber, sliced
1 red onion, thinly sliced
1 cup (175g) black olives
300g firm feta, slicedred wine vinegar dressing
ΒΌ cup (60ml) red wine vinegar
2 tablespoons olive oil
2 tablespoons Dijon mustard
2 teaspoons caster (superfine) sugar
sea salt and cracked black pepperTo make the red wine vinegar dressing, place the vinegar, olive oil, mustard, sugar, salt and pepper in a bowl and whisk to combine. Set aside.
Place the tomatoes, cucumber, red onion, olives and feta in a bowl and toss to combine. Pour over the dressing and serve with the red mullet as part of a banquet. Serves 4.
