1 cup (150g) self-raising (self-rising) flour
rocket (arugula) leaves, to serve
2 eggs
¾ cup (185ml) milk
¼ cup chopped basil leaves
1 small red chilli, chopped
1 tablespoon finely grated lemon rind
1 red onion, chopped
sea salt and cracked black pepper
vegetable oil, for shallow-frying
12 green (raw) medium prawns (shrimp), peeled
lemon wedges, to servePlace the flour, eggs and milk in a bowl and whisk to combine. Stir in the basil, chilli, lemon rind, onion, salt and pepper. Heat the oil in a large non-stick frying pan over medium heat. Add a prawn, pour 2 tablespoons of batter over and cook for 2–3 minutes each side or until golden. Repeat with remaining ingredients. Serve with rocket and lemon wedges. Makes 12.
