prawn, chilli and basil fritters
  • 1 cup (150g) self-raising (self-rising) flour
  • rocket (arugula) leaves, to serve
  • 2 eggs
  • ¾ cup (185ml) milk
  • ¼ cup chopped basil leaves
  • 1 small red chilli, chopped
  • 1 tablespoon finely grated lemon rind
  • 1 red onion, chopped
  • sea salt and cracked black pepper
  • vegetable oil, for shallow-frying
  • 12 green (raw) medium prawns (shrimp), peeled
  • lemon wedges, to serve
