6 large red chillies seeds removed and chopped
2 teaspoons dried shrimp paste*
⅓ cup dried prawns (shrimp)
2 onions, chopped
1 tablespoon grated ginger
2 stalks lemongrass, chopped
1 teaspoon ground tumeric
1 tablespoon ground cuminPlace all the ingredients in a small food processor or blender and process until smooth. Refrigerate for up to 2 weeks. Makes ½ cup.
* Dried shrimp paste is available from Asian grocers.
