mint pesto

  • ½ cup (80g) pine nuts
  • ⅓ cup chopped green onion (scallion)
  • 1 cup mint leaves 
  • 2 teaspoons white wine vinegar 
  • ½ cup (125ml) olive oil 
  • 1 tablespoon lemon rind 
  • sea salt and cracked black pepper
  1. Place the pine nuts, green onion, mint, vinegar, oil, lemon rind, salt and pepper in the bowl of a small food processor and process until smooth. Makes 1¼ cups.
