¼ cup (60ml) malt vinegar
1 tablespoon olive oil
1 teaspoon brown sugar
9 vine-ripened or heirloom tomatoes, sliced
6 truss cherry tomatoes
1 red onion, thinly sliced
2 teaspoons sumacPlace the vinegar, oil and sugar in a small bowl and mix until sugar is dissolved. Place the tomato and onion in a bowl and pour over the dressing. Set aside for 10 minutes to marinate. Sprinkle with sumac to serve. Serves 4–6.
