mascarpone mashed potato

  • 400g sebago (starchy) potatoes, peeled and chopped
  • ½ cup (125g) mascarpone 
  • 50g unsalted butter, softened 
  • sea salt flakes
    ground white pepper
  1. Place the potato in a large saucepan of salted cold water and bring to the boil. Cook for 15 minutes or until tender when tested with a skewer. 
  2. Drain and return to the saucepan. Add the mascarpone, butter, salt and pepper and mash until smooth. Serves 2.
