This sweet and savoury roasted chilli jam (or nam prik pao) is ubiquitous in Thai cooking and is made from chillies, garlic, dried shrimp and a handful of other ingredients. You can eat the chilli jam straight from the jar as a dipping sauce, use as a marinade or add it to your favourite Asian-style dishes, such as soups and stir-fries.
