chocolate dessert cakes

  • 1 packet Donna Hay fudgy chocolate cake with ganache icing mix
  • 2 eggs
  • ½ cup (125ml) milk
  • 125g melted unsalted butter 

Chocolate ganache

  • 1 sachet chocolate chunks for icing
  • ¼ cup (60ml) cream

Each packet contains

  • 1 sachet chocolate cake mix
  • 1 sachet chocolate chunks for icing
  1. Preheat oven to 160°C (fan forced).
  2. Lightly grease 6 x ¾-cup-capacity (180ml) metal pudding moulds or ovenproof ramekins.
  3. Following the packet instructions, place the cake mix sachet in a large bowl. Make a well in the centre.
  4. Whisk to combine the butter, milk and eggs. Pour into the centre of the cake mix and stir until smooth. 
  5. Spoon ½ cup (125ml) of the cake mixture into each mould. Transfer onto a baking tray and bake for 20-25 minutes or until just set to the touch. Allow to cool in the tins for 5 minutes before turning out onto serving plates.
  6. While the dessert cakes are cooking, make the ganache icing. Place the chocolate chunks and cream in a saucepan over low heat. Stir until the chocolate melts.
  7. Allow the icing to stand for 5 minutes, then pour it over the dessert cakes and serve. Makes 6
