butter icing

  • 250g (8¾ oz) unsalted butter, softened
  • 1 cup (150g/5¼ oz) icing (confectioner’s) sugar, sifted
  • 1 teaspoon vanilla extract
  1. Place the butter in the bowl of an electric mixer and beat for 8−10 minutes or until pale and creamy. 
  2. Add the icing sugar and vanilla and beat for a further 10-15 minutes or until light and fluffy.+ Makes 1 quantity. 

+For chocolate butter icing add ½ cup (50g) of sifted cocoa in step 2.
