miso pork, brown rice and lime burgers

- ½ cup (100g) brown rice, cooked and cooled
- 2 tablespoons white miso paste
- 1 teaspoon finely grated lime rind
- 400g pork mince
- sea salt and cracked black pepper
- 1 tablespoon vegetable oil
- 2 cups (160g) shredded green cabbage
- 2 green onions (scallions), thinly sliced
- 1 carrot, shredded
- 1 tablespoon mayonnaise, plus extra to serve
- 1 tablespoon lime juice
- 4 burger buns, halved and toasted
- store-bought chilli sauce, to serve
- Place the rice, miso, lime rind, pork, salt and pepper in a large bowl. Mix to combine and divide into 4 patties. Heat the oil in a large non-stick frying pan over medium heat. Cook patties for 6 minutes each side or until cooked through.
- Place the cabbage, onion, carrot, mayonnaise and lime juice in a large bowl and toss to combine. Spread the bun bases with extra mayonnaise. Top with the patties, slaw, chilli sauce and bun tops to serve. Serves 4
