miso pork, brown rice and lime burgers

  • ½ cup (100g) brown rice, cooked and cooled
  • 2 tablespoons white miso paste
  • 1 teaspoon finely grated lime rind
  • 400g pork mince
  • sea salt and cracked black pepper
  • 1 tablespoon vegetable oil
  • 2 cups (160g) shredded green cabbage
  • 2 green onions (scallions), thinly sliced
  • 1 carrot, shredded
  • 1 tablespoon mayonnaise, plus extra to serve
  • 1 tablespoon lime juice
  • 4 burger buns, halved and toasted
  • store-bought chilli sauce, to serve 
  1. Place the rice, miso, lime rind, pork, salt and pepper in a large bowl. Mix to combine and divide into 4 patties. Heat the oil in a large non-stick frying pan over medium heat. Cook patties for 6 minutes each side or until cooked through. 
  2. Place the cabbage, onion, carrot, mayonnaise and lime juice in a large bowl and toss to combine. Spread the bun bases with extra mayonnaise. Top with the patties, slaw, chilli sauce and bun tops to serve.  Serves 4
