apple crumble cupcakes

- 1 packet Donna Hay apple crumble cinnamon cake mix
- 125g unsalted butter, melted
- 125ml milk
- 2 eggs
- 2 small apples, peeled and chopped
Crumble topping
- 1 sachet crumble mix
- 80g unsalted butter, melted
Each packet contains
- 1 sachet apple cinnamon cake mix
- 1 sachet crumble mix
- Preheat oven to 180°C (fan forced).
- Line a 12-hole ⅓-cup-capacity (80ml) muffin tin with cases.
- Following the packet mix instructions, place the butter, milk and eggs in a large bowl and whisk until combine. Add the cake mix and stir until smooth. Add the apple and mix to combine.
- To make the crumble topping, place the crumble mix and butter in a bowl and mix to combine. Sprinkle the crumble topping over the muffins.
- Bake for 20 minutes or until cooked when tested with a skewer. Allow to cool in the tin for 5 minutes before placing onto a wire rack to cool. Makes 12
