fig martini

  • 8 figs, chopped
  • ⅓ cup (75g) caster (superfine) sugar 
  • 2 cups (500ml) gin 
  • 2 tablespoons vermouth 
  • ice cubes 
  • 2 figs, extra, to serve
  1. Place half of the figs, sugar, gin, vermouth and ice cubes in a cocktail shaker or jar with a lid and shake until well combined. 
  2. Strain into 4 martini glasses and top each with a fig quarter.+ Repeat with remaining ingredients. Serves 8.
