crispy chicken and nam jim salad
  • 4 x 200g chicken breast fillets, skin on
  • olive oil for brushing
  • sea salt and cracked black pepper
  • 200g green beans, trimmed, blanched and sliced
  • 200g snow peas (mange tout), trimmed, blanched and sliced
  • 1 cup coriander (cilantro) leaves to serve

nam jim

  • 2 cloves garlic
  • 2 large red chillies, roughly chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon chopped coriander (cilantro) root
  • 2 green onions (scallions), roughly sliced
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
