feta and lemon dip
Preheat oven to 220ºC (425ºF). To make the feta and lemon dip, place the feta, lemon rind, lemon juice, garlic and oil in the bowl of a small food processor and process until smooth. Set aside.
Place the pita bread on a baking tray and drizzle with oil. Cook for 10 minutes or until crispy. Set aside.
Place the tomato, basil, mint, oil, lemon rind, vinegar, salt and pepper in a bowl and mix to combine. Serve with the dip and crispy pita bread. Serves 4.
