8 slices wood-fired bread
olive oil, for brushing
1 x 200g cooked chicken breast fillet, shredded
8 slices pancetta, torn
1 cup (100g) grated mozzarella
¼ cup (20g) finely grated parmesan
sea salt and cracked black pepper
¼ cup basil leavesHeat a char-grill pan over high heat. Brush the bread with oil and cook for 2–3 minutes each side or until golden. Place the chicken, pancetta, mozzarella, parmesan, salt and pepper in a bowl and toss to combine. Top the bread with the chicken mixture and place under a preheated hot grill (broiler) for 3–4 minutes or until the cheese is melted and golden. Top with basil to serve. Serves 4.
