10 gow gee or wonton wrappers
melted unsalted butter, for brushing
1 Granny Smith (green) apple, finely sliced
1 cup finely sliced fennel
170g smoked chicken breast fillet, trimmed and finely shredded
4 green onions (scallions), sliced finelyhorseradish lemon dressing
¼ cup (60ml) lemon juice
1 tablespoon store-bought horseradish cream
1 tablespoon olive oil
1 teaspoon caster (superfine) sugarPreheat oven to 180°C (355°F). To make the horseradish lemon dressing, place the lemon juice, horseradish cream, oil and sugar in a bowl and stir until well combined. Set aside.
Brush the gow gee wrappers with butter, place on baking trays and bake for 5–6 minutes or until golden and crispy. Place apple, fennel, chicken, green onion and dressing in a bowl and toss to combine. Serve the crispy wrappers as a scoop for the horseradish, apple and fennel salad. Serves 6–8.
