1.5kg butternut pumpkin, quartered
12 bacon slices
¼ cup (60ml) olive oil
sea salt and cracked black pepperPreheat oven to 160°C (320°F). Wrap 3 slices of bacon around each pumpkin quarter and place in a baking dish. Add the oil, salt and pepper and toss to coat. Roast for 1 hour and 15 minutes or until tender.
