crunchy baby potatoes

  • 24 chat (baby) potatoes
  • ¼ cup (60ml) olive oil 
  • sea salt and cracked black pepper
  1. Preheat oven to 200°C (390°F). Use a small sharp knife to cut thin slices into the potato, ensuring you don’t cut all the way through. Place the potatoes in a bowl with the oil, salt and pepper and toss to coat. Place in a baking dish and roast for 35−40 minutes or until golden and crunchy. Serves 6.
