honey and lemon thyme roasted carrots

- 500g heirloom carrots, peeled and trimmed
 - 2 tablespoons extra virgin olive oil
 - ¼ cup (60ml) honey
 - 1 tablespoon lemon juice
 - 6 sprigs lemon thyme
 - sea salt and cracked black pepper
 
- Preheat oven to 200°C (400°F). Place the carrots on a large baking tray with the oil, honey, lemon juice, thyme, salt and pepper and toss to combine. 
 - Roast for 30 minutes or until the carrots are tender. Serves 2.
