mascarpone mashed potato
- 400g sebago (starchy) potatoes, peeled and chopped
- ½ cup (125g) mascarpone
- 50g unsalted butter, softened
- sea salt flakes
- ground white pepper
- Place the potato in a large saucepan of salted cold water and bring to the boil. Cook for 15 minutes or until tender when tested with a skewer.
- Drain and return to the saucepan. Add the mascarpone, butter, salt and pepper and mash until smooth. Serves 2.
