roasted baby tomatoes and beans

- 600g green beans, trimmed
- 500g truss baby Roma tomatoes
- 8 sprigs lemon thyme
- 2 cloves garlic, crushed
- 2 tablespoons lemon-flavoured olive oil
- 1 tablespoon white wine vinegar
- Preheat oven to 200ºC (400ºF). Place the beans, tomatoes, lemon thyme and garlic on a baking tray.
- Drizzle with oil and vinegar and roast for 4–5 minutes or until beans are tender. Serves 4–6
