potato fries

- 1kg Desiree potatoes, peeled and cut into 7mm (¼ inch) thick batons
- ¼ cup (60ml) white vinegar
- 1 litre cold water
- vegetable oil, for deep-frying
To serve
- sea salt flakes or flavoured salts, for sprinkling
- Place the potatoes in a large bowl, and add the vinegar and water. Allow to soak for 30 minutes.
- Drain the potatoes and pat dry with clean tea towels or absorbent kitchen paper.
- Heat 6cm (2½ inches) of oil in a large deep saucepan or wok over medium heat until the temperature reaches 190°C (375°F) on a deep-frying thermometer. In small batches, cook the potatoes for 6–7 minutes or until a light golden brown and cooked.
- Use a slotted spoon to transfer the fries onto absorbent kitchen paper. Serve sprinkled with salt.
