potato fries

  • 1kg Desiree potatoes, peeled and cut into 7mm (¼ inch) thick batons 
  • ¼ cup (60ml) white vinegar
  • 1 litre cold water
  • vegetable oil, for deep-frying

To serve

  • sea salt flakes or flavoured salts, for sprinkling 
  1. Place the potatoes in a large bowl, and add the vinegar and water. Allow to soak for 30 minutes. 
  2. Drain the potatoes and pat dry with clean tea towels or absorbent kitchen paper. 
  3. Heat 6cm (2½ inches) of oil in a large deep saucepan or wok over medium heat until the temperature reaches 190°C (375°F) on a deep-frying thermometer. In small batches, cook the potatoes for 6–7 minutes or until a light golden brown and cooked. 
  4. Use a slotted spoon to transfer the fries onto absorbent kitchen paper. Serve sprinkled with salt.
