Speckled brownie eggs

- 1 packet donna hay choc chunk brownie mix+
- 125g unsalted butter, melted
- 2 eggs
- 2 teaspoons milk
chocolate glaze
- 250g white chocolate, chopped
- ½ teaspoon vegetable oil
- 2 drops blue food colouring
speckle mixture
- 2 teaspoons cocoa
- 3 teaspoons water
each packet contains:
- 1 sachet brownie mix
- 1 sachet chocolate chunks
- Preheat the oven to 160°C (350°F).
- Following the packet mix instructions, combine the brownie mix, melted butter and eggs. Add the chocolate chunks and mix to combine.
- Spoon the mixture into a lightly greased 20cm square cake tin lined with non-stick baking paper. Bake for 45 minutes or until the brownie is set. Allow the brownies to cool in the tin completely.
- Cut the firm brownie edges off and discard. Crumble the brownie into a bowl. Add the milk and mix until combined++.
- Roll 1 tablespoonfuls of the mixture into an egg shape and place on a tray lined with non-stick baking paper.
- To make the chocolate glaze, place the white chocolate and oil in a heatproof bowl over a saucepan of simmering water (the bowl should not touch the water). Stir until melted and smooth. Add the food colouring and stir well to combine. Remove from the heat and place over a bowl of warm water to keep the chocolate melted.
- Using a fork, dip each egg in a the melted chocolate and tap off the excess. Place on the tray linked with non-stick baking paper.
- To make the speckle mixture, combine the cocoa and water.
- Using a pastry brush, Dip the ends in the cocoa mixture and flick onto the egg. Store the chocolate brownie speckle eggs in the refrigerator and remove 5 minutes before serving. Makes 16

++ It is best to add the milk a little bit at a time. If you find the mixture is still crumbly after adding the milk, simply add another half teaspoon until it sticks together.
