Coconut margarita

  • 2 teaspoons sea salt flakes
  • 2 teaspoons finely grated lime rind
  • lime wedge, to rub
  • ½ cup (125ml/4¼ fl oz) coconut cream
  • 1 cup (250ml/8½ fl oz) coconut milk
  • 120ml (4 fl oz) tequila
  • ¼ cup (60ml/2 fl oz) light agave syrup
  • ⅓ cup (80ml/2¾ oz) lime juice
  • 3 cups ice
  • dried lime slices (optional), to serve 
  1. Combine salt and lime rind in a small shallow bowl. Rub lime wedge around the rim of 4 cocktail glasses. Dip each rim into the salt mixture and set aside. 
  2. Place coconut milk and cream, tequila, agave syrup, lime juice and ice in a blender and blend until combined and ice is crushed. 
  3. Pour margarita into the prepared cocktail glasses and serve with the lime slices, if you like. Makes 4
