Coconut margarita
- 2 teaspoons sea salt flakes
- 2 teaspoons finely grated lime rind
- lime wedge, to rub
- ½ cup (125ml/4¼ fl oz) coconut cream
- 1 cup (250ml/8½ fl oz) coconut milk
- 120ml (4 fl oz) tequila
- ¼ cup (60ml/2 fl oz) light agave syrup
- ⅓ cup (80ml/2¾ oz) lime juice
- 3 cups ice
- dried lime slices (optional), to serve
- Combine salt and lime rind in a small shallow bowl. Rub lime wedge around the rim of 4 cocktail glasses. Dip each rim into the salt mixture and set aside.
- Place coconut milk and cream, tequila, agave syrup, lime juice and ice in a blender and blend until combined and ice is crushed.
- Pour margarita into the prepared cocktail glasses and serve with the lime slices, if you like. Makes 4
