1.9kg pork spare ribs glaze
2 teaspoons peanut oil
1 green onion (scallion), finely sliced
2 cloves garlic, finely chopped
½ cup (125ml) sweet chilli sauce
¼ cup (60ml) soy sauce
¼ cup (45g) brown sugarPreheat oven to 200°C (390ºF). Cut the ribs in half, place on wire racks in 2 baking trays and bake for 1 hour.
To make the glaze, heat the oil in a large deep frying pan over medium heat. Add the green onion and garlic and cook for 2 minutes. Add the chilli sauce, soy sauce and sugar and simmer for 4 minutes or until thick. Remove from heat, add ribs and mix to coat well. Serve with remaining glaze. Serves 4.
