- 8 figs, chopped
- ⅓ cup (75g) caster (superfine) sugar
- 2 cups (500ml) gin
- 2 tablespoons vermouth
- ice cubes
- 2 figs, extra, to serve
- Place half of the figs, sugar, gin, vermouth and ice cubes in a cocktail shaker or jar with a lid and shake until well combined.
- Strain into 4 martini glasses and top each with a fig quarter.+ Repeat with remaining ingredients. Serves 8.
