salt-crusted potatoes

  • 1kg chat (baby) potatoes
  • 1 tablespoon sea salt flakes 
  • 3 cups (750ml) water 
  • 50g butter
  1. Place the potatoes, salt and water in a large saucepan over high heat. Bring to the boil and cook, stirring occasionally, for 20–25 minutes or until the water has evaporated and the potatoes are tender. Add butter and toss to coat.
