⅓ cup (80ml) water
⅓ cup (75g) white sugar
250g strawberries
120g raspberries
250g mascarpone
1 tablespoon honey
4 slices white bread, crusts removedPlace the water and sugar in a small saucepan over low heat and stir until dissolved. Simmer for 5 minutes. Add the berries and cook for a further 2 minutes or until tender. Allow to cool. Strain, reserving liquid, and set aside. Combine the mascarpone and honey. Spread half the bread slices with the mascarpone mixture and sandwich with the remaining bread. Cut in half and dip in the reserved liquid. Top with the berries and remaining reserved liquid. Serves 4.
