8 strawberries, hulled and halved
1 mango, peeled and sliced
500g watermelon, peeled and sliced
500g rockmelon, peeled and slicedkaffir lime syrup
½ cup (110g) caster (superfine) sugar
½ cup (125ml) water
2 kaffir lime leavesTo make the kaffir lime syrup, place the sugar and water in a saucepan over medium heat and stir until the sugar is dissolved. Add the kaffir lime leaves and simmer for 5 minutes or until syrupy. Allow to cool. Divide the fruit between plates and spoon over the kaffir lime syrup to serve. Serves 4.
