apple crumble cupcakes

  • 1 packet Donna Hay apple crumble cinnamon cake mix
  • 125g unsalted butter, melted
  • 125ml milk
  • 2 eggs
  • 2 small apples, peeled and chopped

Crumble topping

  • 1 sachet crumble mix
  • 80g unsalted butter, melted

Each packet contains

  • 1 sachet apple cinnamon cake mix
  • 1 sachet crumble mix
  1. Preheat oven to 180°C (fan forced).
  2. Line a 12-hole ⅓-cup-capacity (80ml) muffin tin with cases.
  3. Following the packet mix instructions, place the butter, milk and eggs in a large bowl and whisk until combine. Add the cake mix and stir until smooth. Add the apple and mix to combine. Divide the mixture between prepared muffin cases.
  4. To make the crumble topping, place the crumble mix and butter in a bowl and mix to combine. Sprinkle the crumble topping over the muffins.
  5. Bake for 20 minutes or until cooked when tested with a skewer. Allow to cool in the tin for 5 minutes before placing onto a wire rack to cool. Makes 12
