mint pesto

- ½ cup (80g) pine nuts
- ⅓ cup chopped green onion (scallion)
- 1 cup mint leaves
- 2 teaspoons white wine vinegar
- ½ cup (125ml) olive oil
- 1 tablespoon lemon rind
- sea salt and cracked black pepper
- Place the pine nuts, green onion, mint, vinegar, oil, lemon rind, salt and pepper in the bowl of a small food processor and process until smooth. Makes 1¼ cups.
