potato parcels with lemon and thyme

- 48 chat (baby) potatoes, washed and dried
- 4 tablespoons unsalted butter
- 8 thin wedges of lemon
- 8 sprigs thyme
- sea salt and cracked black pepper
- Preheat oven to 200ºC (390ºF). Cut eight 30cm x 40cm rectangles of non-stick baking paper. Place 6 potatoes in each paper parcel. Top with ½ tablespoon of butter, a wedge of lemon, a sprig of thyme, salt and pepper. Wrap the potatoes and fold the ends to enclose. Place on a baking tray and bake for 35–40 minutes or until the potatoes are cooked through. Serves 8.
